Eggy Pizza


My mother once ordered a pizza in Italy by nodding her head at everything the Italian waiter suggested. My mother does not speak Italian. Her pizza arrived with everything plus a fried egg. When I was in Italy last month I had the opportunity to taste the mythic egg-pizza. It was quite good. We probably shouldn’t have been making fun of her for the past 25 years.

    Hmmmm tasty, looks nice and greasy, just what I need for my diet… but if it’s all olive oil then it’s good for you…..and me, if I were to ever eat one… maybe I’ll take that recipe and make one sometime….. 7 years working in a pizza shop, no eggs… what gives??

    The eggs aren’t usually fried, they just plop them on raw and they bake in the oven.

    I had a pizza like that in London… although the one in the picture looks amazing!
